Pickled wild mushrooms: sooo yummy!


After picking the wild mushrooms, it was time to wash them carefully. Then, boiling the mushrooms 3 times (each time changing the water) to get rid of the bitterness. And then, the pickling.

I like adding other veggies: in this case I had onions and bell peppers, carrots are also good. Some other flavors from the garden: I had rosemary and bay leaves. Peppercorns and coarse salt are good additions too.

I cut everything in thin slices and put it to boil in a pan with olive oil, vinegar and water in 3 equal parts. Just enough to cover everything. About 5 minutes and it's ready. Let it cool down.

After it has cooled you can store them in glass jars. In the fridge, they probably last up to a month or more. I'm guessing on that, because we always finish them before that. They're that good.

We went a couple of days later around the house and there were mushrooms everywhere: we picked enough to prepare a pot-full of mushrooms and have enough now for a few weeks.

They're super on bread or crackers, and have tried also with a tomato salad.

Asesoramiento sobre cultivos y cuidados de plantas dalla Italia

Graciela, una amiga que se auto-proclama "amante de la naturaleza" y que ha aprendido sobre la marcha acerca del mantenimiento de una huerta y otras opciones alternativas de vida, ha aceptado muy generosamente a asesorarme en mis primeros intentos en tener una huerta orgánica. Acá van tres de las primeras recomendaciones que me hizo:

 "Per quanto riguarda le tue zucchine, le piante in genere hanno bisogno di molta luce, tanta aria e spazio, acqua (ma ben drenata, non stagnante!). Per concimare, oltre all'humus del bosco e al terriccio del compost, ogni tanto mettiamo un po' della cenere che produciamo (qui a casa tutto - cucina, riscaldamento - va a legna, quando non c'è sole; altrimenti tutto è solare)."

Seguí sus consejos de aire y sol para el zucchini (en realidad son calabacines los míos pero la idea es la misma) y decidí ponerlos verticales. En parte también porque estaban creciendo muchísimo y me habían ocupado todo el espacio. No sabía si aguantaría la planta pero después vi fotos como esta:

y la verdad que viene funcionando sin mayores problemas (las tormentas huracanadas que hemos tenido me obligaron a atar las plantas con más cuidado, pero sobrevivieron).

En el momento que me lo recomendó las plantas todavía estaban verdes y preciosas pero después de unos días de lluvias fuertes, empezaron a mancharse de blanco. Siguiendo las recomendaciones a cortar y rociar con una solución de ajo y cebolla.

"Infine, un suggerimento secondo me valido per tutte le piante è "toccarle", accarezzarle proprio, delicatamente, come se fossero degli animaletti domestici: è comprovato che le piante diventano più resistente se vengono toccate."

Esa tarea se la dejé a mi sobrina de dos años y medio, que me seguía mientras yo cuidaba la huerta y arracaba hojitas y flores para dármelas.
 Después de explicarle que a las plantas había que cuidarlas y tratarlas con mucho cariño, se puso a dare besitos a las hojas del zucchini.

Por mi parte, además de los consejos de Graciela, el crédito de que las plantas de zucchini vengan tan bien se lo lleva el cuidado y los besos que le dio mi pequeña Hada de la Huerta.

Alternative cleaning products for your house

Some days ago I wrote about a new blog where you can find reliable info on how to get rid of synthetic products in your home. You know, the chemicals that are not a good idea if you have allergies or sensitivities. (Aquí tienes una versión en español)

The writer of the blog has become an expert on what to avoid, so I thought I could find out bit more where and how to start if you've no specific allergy or sensitivity that you know of, but would like healthier  cleaning products for your home.

Q: Where would you start? I'm thinking busy working parent with three small children and no time for anything.

A: I would suggest getting some white vinegar and baking soda, cheap and easy to get a hold of, and trying them out on different surfaces. Try them together or apart. Baking soda helps to scrub surfaces, and works especially well with a sponge that has a scrubbing side. Try them in the washroom, toilet, counters, bathtub and floors.

Q: What about things that are hard to clean, like toilet stains and grout with mold?

A: Let vinegar or half a cup of lemon juice sit in the toilet for 30 minutes or more before scrubbing. Half a package of baking soda left to soak for a while can work too. Scrub well. If that doesn't work try borax. Hydrogen peroxide (found at the pharmacy, the 3% or less solution) and baking soda form a great paste that has some bleaching qualities and can get rid of stains on laminate, and tile grout, including mould.

Q: Which products are most toxic?

A: In my experience, those containing bleach or ammonia (which are easily replaced with hydrogen peroxide), and airborne sprays that contain strong fragrances. Fragrances are made up of a host of highly toxic chemicals. Regular fabric softener and dryer sheets are highly toxic as well, and not necessary!

Q: Which products are easier to replace?

A: Conventional window cleaners are so toxic and so unnecessary. A solution of 1 part vinegar and 1 part water in a spray bottle works equally well. Wipe with newspaper. Or, water and a microfiber cloth works just as well.

An all purpose spray is also easy to replace with a combination of the products I've mentioned before.

Hand soap can easily be replaced with a natural bar like glycerin.

Q: Some people prefer their cleaning products to have a nice smell. What would you recommend? 

A: You could add lemon or essential oils or buy a ready-made natural, non-toxic spray solution scented with essential oils. 

Q: Do you still buy some products?

A: I still buy dish washing soap and laundry soap. I choose natural biodegradable ones. You could make them yourself however.

Cerrá el agua: faltan 20 días para la Hora de la Tierra

La iniciativa de hoy es hacer un uso consciente del agua. La propuesta original de Do The Green Think que habíamos comentado antes es tomar duchas más cortas. Pero podemos ir un poco más allá, ¿no? Entre los cambios de comportamiento más básicos y que no necesitan ningún cambio de infraestructura, están los clásicos cerrar la canilla mientras nos lavamos los dientes o cuando lavamos los platos. Si te quedaste sin ideas de como economizar agua, puedes encontrar una lista de cosas que puedes hacer para disminuir tu consumo de agua acá y acá.

Algunas instituciones en lugares como Vancouver, Canadá, también se han sumado a las iniciativas de ahorro de agua. Por ejemplo, instalando inodoros duales con opción de tirar más o menos agua.

Un paso extra que han tomado en esa comunidad fue utilizar el agua de lluvia para riego de plantas en el terreno y también para la cisterna de los inodoros.





Y obviamente cuenta con la aprobación de los usuarios, si nos guiamos por la carita feliz y la nota que dejaron (Hooray!!!!).

Ideas para reutilizar botellas de plástico IV: huerta

Después de todos estos ejemplos ya estarán prontos para pasar a temas mayores. ¿Qué tal un invernadero para la huerta?

También esta la versión haragana que yo uso, menos impresionante pero bastante efectiva: un invernadero individual para cada plantita. Es ideal para proteger los brotes cuando aún están muy vulnerables, pero con una botella grande, de varios litros, sirve también para plantas más grandes.

Si insiste en un invernadero en serio pero con un acabado diferente, se puede optar por techo de tejas, es decir, tejas hechas a partir de botellas de plástico. ¿Por qué no?


Ideas para reutilizar botellas de plástico III: jardín

Después que tenemos la casa limpia y ordenada, toca salir al jardín y seguir encontrando nuevos usos para las botellas de plástico.

 Re-utilizar en el jardín 

El uso más obvio y común es el que vemos en la primera foto: como contenedor para plantas. 

En el diagrama de abajo vemos un uso un poco más sofisticado, ya que permite drenar el agua que sobra y volver a utilizarla. Es cuestión poner una parte de la botella encastrada en la otra y utilizarla de almácigo.





A la hora de regar las plantas, surge otra oportunidad de re-utilizar otra botella. Esta vez, se agujerea la botella, se ata la manguera al pico de la botella y voilá, un regador improvisado. Para los muy sofisticados, se puede poner la botella sobre rueditas.

En el ejemplo siguiente una botella de shampoo termina siendo un recipiente para colgar y recargar el teléfono, práctico y decorativo.



Aún más simple es la solución que encontraron para cerrar bolsas de plástico de manera hermética. Super fácil de abrir y volver a cerrar.


Ideas para reutilizar botellas de plástico I: limpieza

Hay muchas ideas sobre como reutilizar las botellas de plástico - desde las más simples y obvias, hasta algunas que implican un poquito más de elaboración. En las siguientes estradas mostramos algunas para la limpieza y organización de la casa, el jardín y hasta la construcción.

Re-utilizar en la limpieza

A partir de botellas con mangos se puede sacar diferentes tipos de palitas. No se necesita nada más que un par de tijeras y cortar por la línea de puntos que muestra el diagrama.

Después, con varias botellas de bebidas y un poco más de manualidad y paciencia, puede hacerse de una escoba. Y como ya tiene la palita, ¡a barrer!

¿Dónde tirar lo barrido? En una papelera o basurero también hecho de botellas de plástico. Parece una idea particularmente buena para basureros en espacios públicos para disuadir el vandalismo.

¿Por qué plantar semillas 'heirloom'?

Rápido: ¿cuántos tipos de tomates puedes nombrar?

La mayoría de nosotros conocemos el tomate común para hacer salsa, el tomate perita, el tomatito cherry y hasta ahí llegamos.  En realidad existen unas 7500 variedades (según wikipedia). Lo que pasa es que generalmente sólo tenemos acceso a un puñado de variedades que se producen comercialmente.

El problema de limitarnos a unas pocas variedades lo habíamos discutido ya en otra entrada anterior sobre soberanía alimentaria.

Pero además, saben peor. Me encantó esta cita que ponen en Wikipedia en inglés (y que curiosamente no aparece en la versión en español) sobre las variedades comerciales modernas:

"The poor taste and lack of sugar in modern garden and commercial tomato varieties resulted from breeding of tomatoes which ripen uniformly red. This change occurred after discovery of a variety in the mid 20th century which ripened uniformly which was then widely cross-bred to produce attractive red fruit without the typical green ring surrounding the stem on uncross-bred varieties. Prior to general introduction of this trait tomatoes were able to produce more sugar during the process of ripening and were sweeter and more flavorful."

Y sí. Quienes producen frutas y verduras comercialmente en general están más interesados en que no se machuquen durante el translado o se vean lindas y uniformes. El sabor o si son más o menos sanos queda en tercer plano.

El tema no es sólo con el tomate. Lo mismo pasa con las papas y muchas otras frutas y hortalizas que consumimos a diario.

Cuando decidí hacer mi mini-huertita en Vancouver opté por comprar semillas "heirloom" - que pueden ser traducidas como antiguas, heredadas, o como quieran llamarlas.

En Canadá y otros países hay algunas compañías que venden semillas heirloom, por ejemplo, Full Circle Seeds y Salt Spring Seeds (compramos de ésta, por correo), pero también hay bibliotecas de semillas heritage o heirloom como ésta en el Reino Unido. También hay grupos informales de intercambio como se da en Uruguay.

Si bien están en inglés, estos cortos videos (3-7 minutos) son suficientemente claros como para mostrar diferentes procesos de cómo conseguir semillas .

En este primer video se explica cómo conseguir semillas de tomate, además de comentar por qué es importante guardar semillas.

El segundo video nos llega desde Inglaterra y explica cómo sacar semillas de zanahorias. También explica por qué es importante que no sean variedades comerciales híbridas y otros detalles valiosos. El proceso lleva un poquito más de trabajo, así que vale la pena ver el video.

 
Y finalmente, en el tercer video se muestra cómo sacar semillas de pepinos. Si bien el sonido e imagen no son buenos es suficientemente claro (y fácil) como para entender el proceso.

Recipes for disaster: our oil and plastic dependency

What happens when you go on an oil diet? I'm not referring to the olive or coconut variety, but the other one, the one you have to drill to find.

A guy decided to try the drilled-oil diet and film the experience. He "invited" his family (wife and two cute boys) to join in the fun. They did, a bit reluctantly, but ended up enjoying some of the changes more than the dad himself.

Getting rid of all plastics in modern life and trying to do without oil takes some planning and lots of behavioral changes. Specially if you're in Finland and you have to walk to the bus stop and then wait for the bus for a long time in below zero temperatures. The movie definitely reminded me of some of our initial struggles when we started to cut down on consumption.

I got to see the film during the 7 Dockanema -documentary festival in Maputo- this past September. In Portuguese it is titled "Receitas para o desastre" and it's a fun mix of English, Finnish and Portuguese subtitles. Couldn't help but think that for the majority of Mozambicans it would be quite a stretch to relate to the concerns of that suburban middle class European family. Yet, as development rolls over Mozambique (or at least Maputo) like a bulldozer, it'll become soon a concern here too.

How to keep stuff out of landfills (+ another nice example of upcycled plastic bottles)

Another neat use for a plastic bottle I came across in FB: this time including the cap plus a couple of other items you can find around the house. A ladle with a broken handle or burnt? Some extra seeds? Feed a bird!

You get to enjoy the birds, birds get to enjoy the food, and more stuff keeps out of the garbage pile.

In Mexico there are also talks about how to re-think our relationship with what we use so that less of our discarded materials end up in the landfill. The first distinction: organic and inorganic. Compost the organic, recycle (or upcycle!) the inorganic.

¿Qué es soberanía alimentaria y por qué importa?

¿Cuál es la relación entre la soberanía alimentaria, las semillas, los productos orgánicos, las huertas urbanas, la agricultura sustentable, el autosustento y tantas otros temas que andan rondando por ahí?

Para empezar a entenderlo, un video argentino lo pone de forma muy simple:



O sea, que además de la seguridad y disponibilidad de alimentos, la soberanía alimentaria se fija en el origen y modo de producción de nuestra comida.

Pero empecemos por el principio. Disponer de una gran variedad de semillas que no sean genéticamente modificadas y que reflejen una amplia biodiversidad es una de los temas que preocupa.

Awaken your inner child: how to play with mud with a purpose

Casas de adobe. Ladrillos de barro. Bio-construcción. Vivienda ecológica. Hay quien sabe a lo que me refiero. Y hay muchos otros que, a la mención de barro, largan una carcajada mientras sacuden la cabeza y mascullan algo sobre hippies o tribus prehistóricas. En Uruguay, donde la construcción de barro y paja es lo que tradicionalmente se usó en el campo para hacer los ranchos, surgen miradas preocupadas y comentarios sobre vinchucas y taperas.

Un proceso eminentemente colaborativo
La construcción en barro es milenaria, pero hay un movimiento de vuelta a esta técnica entre arquitectos, incluso en Uruguay. Entre estos arquitectos está una amiga mía que es gran defensora de ese tipo de casas y que me viene comiendo el coco hace más de una década con los beneficios del barro: mejor aislamiento del frío, del calor y del ruido, más económico, más maleable y con mayor posibilidades creativas, duradero, seguro, agradable. Lógico entonces, que cuando ofrecieron un taller de ladrillos de barro en mi universidad en Vancouver, aproveché.

Compost bin in process

The veggies we had in our previous posting were from our local feria, but the plan is in place to grow some of our own.

To begin at the beginning, Fadi built a big compost bin and we have started composting. Mom was reluctant at first, but she now gathers buckets of peelings, eggshells, coffee, tea, mate and other helpful organic stuff every week.

More bins are to follow and we hope to have some nutritious soil to feed our plants by the summer.

As you can see, quite a bit of planning went into creating the bin.
